Rice and Lentil Casserole

Want something quick and easy?....this is what we had for dinner tonight. I loved it and so did Olivia (Wes wasn't home). Give it a whirl...

I got this recipe is from Oh She Glows
Ingredients:
  • 3 cups vegetable broth
  • 3/4 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 2/3 cup chopped onion
  • 2-3 medium carrots, chopped
  • 1 handful fresh basil, chopped finely
  • 1 small tomato, chopped
  • 1/3 red pepper, chopped
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 2 cloves garlic, chopped finely
  • 1/2-1 tsp Fleur de sel sea salt, to taste
  • Freshly ground black pepper, to taste

Directions: Rinse & drain lentils and rice. Mix all ingredients in a casserole dish. Bake covered for 1½ hours at 300F. It doesn’t get any easier!!!!
